Our Crémant de Bourgogne Blanc de Noirs Brut reveals the pure expression of Pinot Noir and Gamay grapes, from parcels selected for their fruity intensity. Its rosy-gold highlights and aromas of candied fruit, red berries and sweet spices give it a bright, generous personality. On the palate, the wine is vinous and structured, with a rich, well-balanced finish and fine bubbles. Aged 16 months on laths, this elegant brut is a perfect match for aperitifs or poultry in sauce, served chilled at 7-8°C. Foaming and ageing
Liqueur de tirage (a mixture of yeast and sugar) is added to blended wines before bottling. Under the action of the yeast, carbon dioxide generates effervescence. Bottles remain on laths for a minimum of 16 months in our thermo-regulated cellars. This prolonged ageing will enable the wine to develop new, specific aromas and offer elegantly fine bubbles. The bottles are then stirred and disgorged to remove any yeast deposits. A dosage-determining expedition liqueur is added before labeling and packaging.

Winemaking
On receipt of the harvest, we carry out a slow pressing using our pneumatic presses to respect the integrity of the berries. The first presses, richer and more complex, are selected to make the best basic wines in stainless steel tanks. After filtration and clarification, our team of oenologists meticulously compose the blend.
