Tasting

This Crémant boasts a pale yellow color with golden highlights, enlivened by fine, persistent bubbles. The nose, rich and expressive, reveals aromas of ripe yellow fruit, honey, and white flowers. On the palate, the attack is soft, sweet, and velvety, offering a lovely roundness supported by the richness of its fruit. The finish is long and indulgent, leaving a delicately sweet and fruity impression.

Food and wine pairing

The Demi-Sec vintage pairs perfectly with fruity desserts such as a caramelized apple tart, a tarte Tatin, or a tropical fruit salad. It also pairs very well with sweet-and-savory dishes, such as pan-seared foie gras with fruit or blue-veined cheeses like Roquefort.

Foaming and ageing

A tirage liqueur (a mixture of sugar and wine) and a yeast starter are added to the wines before bottling. The effervescence is produced by the fermentation of sugars by the yeast. The bottles will remain lying on slats for at least 12 months at a constant temperature in our cellars. This extended aging will allow the wine to develop specific aromas and produce bubbles of great finesse. The bottles are then riddled and disgorged to remove the yeast sediment. A dosage liqueur, which determines the sweetness level, is added before corking and labeling.

Harvest

Manual

Winemaking

Upon receipt of the harvest, we perform a slow pressing using our pneumatic presses. The first pressings, which are richer and more complex, are selected to produce the best base wines. Fermentation takes place in temperature-controlled stainless steel tanks. After vinification, our team of winemakers meticulously crafts the blend.
